ahh..my first post of 2012 with something more vibrant in color..i shall really post more since i'm slightly more free now compare to the crazy monthSSS before this..
anyway, this was the dessert i made for a tiny lunch function.
instead of the normal panna cotta, decided to use the coconut milk and using the shallow soup bowl as the mould. next time, should use fresh coconut milk instead of concentrated one from the shelves. The concentrated one was just too thick and overpowering.
chargrilled the mango and the gelee was a bit too brittle. a combination of agar and gelatin will be a better one in terms of texture.
but i do love the caramelized kumquat, SOUR+BITTER+SWEET..and the mouthfeel of the kumquat. i guess pairing this with yogurt would be quite a nice one.
and salted caramelized pop corn in a stick. i love caramel and to balance up with the salt..and since i have fleur de sel in hand now, maybe it might taste better. or infusing the thyme flavor into the popcorn. interesting....
can't wait to 'play' in the kitchen tomorrow
