that is one statement that has been approved by most people
but i do know people that would push chocolate away from them
to me, it all depends on my mood
i might love it at this second
i might push it away another second

at this very morning, i decided to love it by understanding the making of ever tempting CHOCOLATE

ever wonder where does the chocolate that melt in your mouth origin from??
this is the original look of cocoa beans before being processed
ever wonder how beans like this would produce those magnificent flavor of chocolate??
ever wonder how to produce your own signature chocolate
this is where i start my learning

Born in Germany, where he also took up his professional training in well known pastry and confectionary outlets, restaurants and hotels.

In 16 year of working in this profession, Matthias attended many of pastry and food related courses and took part in countless international competitions. Matthias was awarded with:
1) The Pastry Olympic Gold Medal in 1996/Berlin
2) Won over 25 Gold Medal awards at International Culinary Competitions
3) Awarded as The Best Pastry Craftsman in Germany In 1989

It was in 1995 when Matthias went abroad, working as Executive Pastry Chef in some prestigious establishments like the Furama Hotel Hong Kong, The Ritz Carlton Millennia Singapore, The Peninsula Bangkok, the Aldon in Berlin, The Shangri-la Kuala Lumpur And Madinat Jumeirah, Dubai.

Matthias is holding a Master Degree in Pastry and Confectionary and is well known by trade professionals throughout the region.

With his company, he specializes mainly in chocolates, cakes and confections emphasizing on innovative concepts and unique designs.

we start of with the making of ganache

painting a layer of melted chocolate as the shell of the ganache
let i set

topping it with another melted chocolate to sealed any empty parts
pour off the excess
before chilling

what you need in handling chocolate
a fast pace and gentle hand

fill in the melted ganache
make sure to tap the mold gently after filling in the ganache
to prevent forming of bubble

after filling in the ganache, chill it until it set
before covering another layer of melted chocolate to top it up
make sure to scrap off the excess
after it set
remove from the mold and that's it!!!!

this is the easiest of all

chocolate fruit
learned up the piping skill
pipe it on the paper
and top it with whatever you prefer
making sure all the nuts are roasted before

this is slightly more difficult
slightly more work where preparation work need to start a day before

next was the rocky mountain

the nut used must be nut that has been processed before
till its sugar crusted

it was my final paper yesterday..

ytd night was a sampat night
working at klcc dinner banquet
being loud and crazy at mamak stall later on
but all this just ends early today
came across something
i really wished i didn't have know
it just stay in my mind the whole day
its pretty bothering

its an early celebration for the mid-autumn festival
i do plan to write this in mandarin
but i dunno how to spell the word, what to do??
like what everyone said, it might be the last gathering before all of us went separate ways
as usual, lee gang plans it all out and all of us went
of course there are always people missing
it doesn't really matter, at least we do syok sendiri with or without them..haha


the foodie..its a package..erm guess the food is not the main subjects that day

wouldn't say its superb, but wouldn't said its not good
maybe all of us are hungry
that why we manage to finish every single dish
imagine chan took almost 3 plate of rice
but crab was certainly not that good but what do you expect with RM 33.80 crab
after the food, of course is the syoking moment
the noise that we made was just intolerable
usually, if i was the customer next table, i would have complaint..haha

how incomplete was dinner without the tasting of mooncakes sponsored by our beloved lee gang and gy sinn


mooncakes and dessert time!!!!
but im not a big fan of moocakes!!but a big fan of salted egg yolk in mooncakes
theirs was a bit too hard and not too fragrant
some is sourish..ehw!!!

nyway it was a fun night..i cherish the moments i had with them

cant wait for tomoro!!!more mooncakes..more laughter..more pictures..more fun..

Monday blues

it is indeed Monday blues to me

early morning waking up carrying hope to had my issues on fyp done

but it seems luck jus wasn't on my side

it is total bullshit

previously its only that the questionaire that don't work

now even the objective don't work

i appreciate that she is giving me opinions and suggestion

telling me the consequences during the seminar

but my pa don't work that way

for me to even voice to him is already a difficulty

with his ego and attitude, he definetly won't accept the changes

its totally devestating for me to deal with this early in the morning

not even a single thing that would boost me to continue with this title

what makes the difference if i would to come out with a new title

i need a solution not suggestion

i need a break

few hours and its over
but the preparation and the cleaning up take more than few hours
is there a lot of obstacles??
not really, more to lots of idiotic problem n cases
lack of communication..
repeated idiotic habits
selfishness in certain people that is obviously reflected
someone at this event told me
is through event that you get to see the real attitude of people
which i totally agree with for this time
all this is total sianess
nyway, at last we get to run the event
not a big success but at least a good ones
a big rest is what everyone need before the next final event

lets talk bout my uni pals part 1

till today i dunno the exact number of students in my course
but i know its around 60++..and in food service (my major) is around 20++
honestly if you ask me, am i close to everyone..NO!! no one in the course is close to everyone
its so impossible
but of course i got a bunch of people that is pretty close to me
until this moment, there are people who is practically afraid of me in school
which i don't give a damn anymore after all the sem
i got serious in work, i mean tht is normal..i mean people are serious when they are passion about their work..
so, i don't see the point of me being extra friendly or nice just to get good reputation among the others..there are this statement certain chinese girls in the coursemate is polite la, know the culture of the others very well la, friendly la, bla bla bla
im certainly not in the category!! but i don't give a damn..certainly those 3 girls in the pic below is not under that category also..we play our own way..we pay the respect to others in our own way..people not getting use with our attitude, jus turn your face and dont look at us la!!someone told me the capable rules at the top..thts pretty cool statement huh!!

but they are always there when i need them, or when they know it is crucial for them to be there for me..one of the reason for me to go school sometimes is just to hang out with them
i still take myself as a princess among them..haha..i know its bad for me to classify my friend into circle..but its the truth..i make it pretty obvious sometimes..since i left only 2 months,..i guess there is a need to spend time with ppl i LOVE BEST when im in school!!

okay, we PLAY HARD, but we WORK OUR ASS off without the need to SHOW it to OTHERS!!

maybe shud do a more precise description of each the next time..yeah!!!

i usually heard last sem ppl are suppose to be free
how come my course is the opposite round
schedule are so hectic until everyday i got to recall what to do
im having difficulty to remember my task
the task dont seems to be a lot but the details in every task is the crucial
im still thinking do i have the time to do all my work
let see whats the upcoming schedule
and i wonder do my coursemate have the same schedule or can be reminder, haha:

13 August - presenting food quality assignment
14 August - FHM exhibition (1 whole day gone)
15 / 16 August - Cameron trip (don't misunderstood, not hols, its school trip)
17 August - mi-sen place for lunch event (this is the one making me crazy, gosh! hate servicing)
18 August - Malaysian Fascinatin Gourmet Lunch Event (another day gone)
19 August - commercial food test (duh!!)
20 August - restaurant management test (double duh!!)
28 August - thesis chapter 1 to 4 due (duh duh duh!!!)

it does not end here..coz there are much more..this is hell of a crazy time

with the H1N1 issues now and rumors spreading that the school will close down..its really not going to be a good holiday..but i don't think there will be another one..as stated in the news

i wonder is it good or not
of course the sem break later on would be cancel
everyone is bothered by this
especially the food service student regarding their functions
i haven't even finalize my appetizer dish for food fair
and presentation for quality also
and of course final year project
its pretty devastating when u know that whatever u done is almost equals to zero
sometimes u just wish you could done a bit more to help out
to share a bit the burden of others
i can understand how stressful is it
the fear of not completing
with more tasks piling up on the table

one minute we know exactly
where we're going
then it's as if some mean-spirited
little gremlin has ripped up the road map
broken the compass and made off with the spark plugs
just for good measure.
When things get that messed up, it would be easy to say ''whatever''
and just sit down and quit
but no matter how tempting that might be, we both know it's not your style.
You have the imagination it takes
to rethink your dream and the courage to set off again-
whether it's down a detour or a new road altogether
The important thing is to keep going at your own pace
with rest stops whenever you need them
and pauses now and then for scenic overlooks
you're on your way,
even if it's not perfectly clear
just where you're headed...

all this is always fresh in memory

but how long will it last from the day he left us

this period of time

how many of us has really appreciate the time with him

how many of us that actually keep him close in heart

with regrets i wouldn't deny that sometimes i wasn't that caring

and now he had left

it may sound cruel

but at certain moment

i'm glad he had left

he no longer suffer from all the pains that i doubt everyone could bare

he no longer need to see his family suffer for him

he went to a better place

MIHAS 3rd Training

it was the 3rd official training for MIHAS ytd
one thing i realize i din really got grumpy throughout the processes for 3 practice
i wonder is that good?
coz when i got grumpy my things went well and just the way i want it
when i'm not, none of the things went well
i was so busy with so many other stuffs that i only did 1 small part of the misen place
very sorry to the members of my team
but im not complaining, things prepared just isn't sufficient
ytd food in terms of PRESENTATION and TASTE SUCKS to the most!!
its a total PISS OFF!!
when other group is catching up, mine was jus flopping
it wasn't that im not convince with the skill of my members
and letting them to be in charge so that i don't look autocratic
but i think its time to change, another 2 practice to go
its time to leave other groups despite being the coordinator
I WANT TO BE IN CHARGE
i'm going do things the way I WANT
things is going to turn out the way i want it to be
maybe not perfect but at least near perfection
i want DRASTIC changes to BOOST my spirit
TASTE!

MIHAS 2nd practice

this was the 2nd practice for the MIHAS competition
but this time we were just preparing a mock instead of 4 full set
and they were for the meat subclass
do i fare good enough??
why don't you tell me??

kobe carpacio accompany with pistachio rock melon and strawberry vinaigrette

this time we only use tenderloin since kobe is too pricey, we leave it for the last practice...and i'm short of strawberries, replaced it with raspberries..the color just wasn't intense enough after blending.. the garlic coating the meat is just too strong and i was hoping the salt flavor to immerse more into the meat

the top view..urgh..when is my new plates coming?? just couldn't stand with the plate..to be truthful, this is just not good enough for me yet..

buttersquash soup with smoked chicken breast and mushroom timbales

1st: flavor of butternut is overpowering that shade of the stock
2nd: the stock just wasn't good enough..mummy made better stock
3rd: onion was just too coarse for timbale and i think shitake/portabellon will be more fragant
4th: of course, waiting the arrival of new soup bowl

lastly, roast rosemary lamb rack with potato choux pastry and saute summer vegetables
1st: its pretty obvious that the meat is overcooked!!
2nd: the sauce wasn't right..its suppose to be really really dark and thick and LESS OILY!!
3rd: the choux pastry should be more brown and even in size

the 1st trial for both subclass just sucks for me!!i wonder is this my only limit or my work have been limited due to intention of others??!!

it brightens my day

it was the MIHAS 1st practice ytd..from morning until night..it was chaos especially its during the exam season and of course i screwed my 1st paper..haih..

anyway i'm not going to elaborate much on event coz those that should know the details already knew..below are some of my group works..won't be elaborating others work cause i don't think im up to par to critic yet..i knw i know its terrible work but hope after more training it will get better..give me some time..:)

1st try: pan-seared scallop with candied orange, tomato coulis and poached prawn with black beans sauce

1st try: combination of sole fillet with parsley potato, watercress salad and creamed leek

after the comment and everything, this is the 2nd try

after such a chaos day, it do drained everyone's energy..although i was determined to study, but i failed to..haha

but the next day, i thought i was going to hibernate in my room, but i just got a msg and i got a surprise and how stupid i am to trust all the words being said previously..

and this is what i got!! see!! how hang fok am i during exam..don't get jeoulous..
